Ginger recipes to enjoy!

A while ago I told you that I discovered ginger and I now eat it a lot. Especially after I found out how healthy ginger is, you can read in my article “Ginger; megalekkere calorie burner & supermedicine!”.

Now it’s really time to introduce you all to ginger. Below you will find some delicious recipes with ginger and other tips. Be surprised and put another one of these delicious dishes on the table tonight!

Our Hello Fresh favorite with ginger
Every week I have come across a delicious ginger dish in the Hello Fresh box. This one is really my favorite and very easy to make!

Surinamese nasi with Chinese cabbage, fried egg and sweet and sour cucumber
Healthy nasi with gingerFor 2 persons (plus toddler): 170 gram Surinamese rice, ½ cucumber, 2 cloves garlic, 2 1/2 cm ginger, 3/4 Chinese cabbage, 3 or 4 spring onions, 6 – 8 sprigs of coriander, peanuts, 2 – 3 eggs, 1 tsp steviasugar, 3 tbsp white balsamic vinegar, 3 tbsp olive oil/sunflower oil, 3 tbsp sauce, pepper and salt. Optional: ½ red pepper.

Cook the rice for 12 minutes, drain and steam.
Grind the cucumber into thin slices. In a bowl, mix the steviasugar with 1 tbsp boiled water, add the balsamic vinegar and possibly a small part of the red pepper. Add salt and pepper to taste. Leave to cool in the fridge.
Peel the garlic and squeeze or chop finely. Peel the ginger and chop finely. Cut the Chinese cabbage as finely as possible. Wash the spring onion and cut finely. Coarsely chop the coriander.

Heat the olive oil or sunflower oil (a large amount) in a frying pan or wok. Throw the garlic and ginger in the oil, be careful not to let it burn. Add the Chinese cabbage shortly afterwards. Spoon well for 4 – 6 minutes on medium heat. Add salt and pepper to taste.

Then add the Surinamese rice, ¾ of the coriander, possibly the rest of the pepper and 2 tablespoons soy sauce. Bake for another 5 minutes on medium heat and stir-fry regularly. Add the sliced spring onion for the last minute.
Fry the eggs on both sides and sprinkle them with 1 tablespoon soy sauce when turning them over. Add salt and pepper to taste.
Serve the egg with the nasi with the fresh cucumber salad and garnish the dish with peanuts and coriander. Enjoy your meal!

My own ginger variant
Ingredients for 2 persons (plus toddler): 170 gram Basmati rice, 2 cloves garlic, 2 1/2 cm ginger, 300 gram fresh green beans, 75 -100 gram mushrooms, 75 gram bean sprouts, 200 gram beef/pig strips, 1 spring onion, 3 tbsp olive oil/ sunflower oil, 4 tbsp Kikoman soy sauce, salt and pepper.

Cook the rice for 10 minutes, drain and let it steam.
Clean the beans and cut into two halves. Cook them until al dente in 5 minutes.
Peel the garlic and squeeze or chop finely. Peel the ginger and cut finely. Finely chop the spring onion and mushrooms.
Season the meat to taste with salt and pepper.
Heat the olive oil or sunflower oil (a large amount) in a frying pan or wok. Throw half of the garlic and half of the ginger into the oil, be careful not to let it burn. Shortly afterwards, add the meat and 2 tablespoons of Kikoman soy sauce. Bake for 4 minutes on high heat and stir frequently.
Then remove the meat from the pan and keep it aside for a while.
Put some oil in the pan again, together with the other half of garlic and ginger. Add the spring onions and mushrooms and fry for 2 minutes. Then add the al dente beans and stir fry for 3 minutes, add the beansprouts and the meat for the last minute. Stir well.
Finally, add the rice and sprinkle with up to 2 tablespoons of Kikoman soy sauce.
Ready to brag! Enjoy it!

And so I use ginger also ginger smoothie recipe
Like tea. Cut some slices of fresh ginger (approx. 2 cm). Grab some fresh mint leaves. Throw both in a teapot. Fill the whole teapot with boiled water and let it steep for 5 – 10 minutes. Real, healthy and above all delicious ginger-mint tea!
In my smoothie. For example a mangosmoothie with avocado and ginger. Throw about 2 cm of ginger, 1 peeled mango and half an avocado in the blender (in this order). Finally, add fresh yogurt, goat yogurt, or almond milk and you have a delicious healthy smoothie.
As an extra ingredient for biscuits, cakes, applesauce, chutney, or in marinade for meat and fish.
